He did it by doing another trick, before completing this one. The person signs the card with the same number and suite of the card that is forced. Next, he keeps that card and does another trick that doesn't involve the card while slipping the card to a camera crew. The card is forced, signed, and the trick is over with. Then he throws the cards at the bottle. Magic has a lot of distraction techniques, usually involving someone doing the dirty work while you're distracting the spectator with "Woooo look what i can do" (other tricks) David Blaine did this trick.
